Salmon rosettes in curry sauce

Ingredients for 2 people:

- 300 g fresh salmon (without skin or bones)
- 100 ml olive oil
- 1 tsp hot curry powder
- 100 g sun-dried tomatoes
- 2 fresh tomatoes
- 1 shallot
- 1 bunch of chives


Preparation:

1. Chop the shallot and chives.
2. Peel, core and deseed the fresh tomatoes, then cut into small cubes.
3. Cut the sun-dried tomatoes into cubes.
4. Cut the salmon into 6 thin slices (5 mm) and roll them up to form rosettes.
5. Warm the olive oil and add to it the shallot, sun-dried tomatoes, curry powder and most of the chives.
6. Season with salt and pepper and beat together.
7. Steam the salmon for 3 to 4 minutes, then season with salt and pepper.
8. Add the cubed fresh tomatoes to the sauce and arrange it on hot plates.
9. Add 3 salmon rosettes per person, garnish with sprigs of chives and serve.
