Chicken à la Niçoise

Ingredients for 4 people:

- 1 chicken (about 1.5kg)
- 6 finely chopped small onions
- 6 anchovies in oil
- 3 tbsp of olive oil
- 2 cloves
- 1 tip and a few pistils of saffron
- 2 pressed garlic cloves
- 300g of tomatoes, peeled and deseeded
- 100g of stoned black olives
- 1 sprig of thyme
- 2 leaves of sage
- 1 bay leaf
- 2dl of chicken stock
- 1 lemon, juiced
- 1/2 tsp of dried chillies
- Salt, freshly ground black pepper

Preparation:

1. Cut the chicken up into pieces.
2. Brown the onions in the olive oil.
3. Season lightly with salt, and add pepper.
4. Add the cloves, saffron, pressed garlic, diced tomatoes, finely chopped olives, chopped anchovies, sage and bay leaf.
5. Moisten with the stock and simmer for 45mins.
6. Before serving remove the sage and the bay leaf, add the lemon juice and the chilli flakes.
