Pesto Chicken Pasta

 

Serves 4


Ingredients:


1 Goody Fusilli Pasta pack (shape 36)

1 small barbecued chicken

1 cup (125g) walnuts

4 beef slices

250 g Goody peeled & chopped tomatoes can

60 g olives, pitted and halved

75 g beef slices, chopped

½ cup (125 g) pesto sauce

½ cup (30 g) fresh basil, finely shredded

Parmesan cheese shavings, for serving

 

Steps:

1-Cook the pasta in a large pan of boiling salted water until al dente (slightly chewy). Drain.

2-While the pasta is cooking, remove the skin of the chicken and cut the chicken into bite-sized pieces to put in a large bowl.

3-Toast the walnut for 2-3 minutes under a hot grill, allow to cool before chopping.

4-Remove the skin from the beef strips and grill for 3-4 minutes until cooked. Allow to cool and chop into small pieces.

5-Add the nuts, beef stock, tomatoes and olives to the chicken.

6-Add the pasta to the chicken mixture, along with the pesto sauce and fresh basil. Toss until thoroughly mixed. Serve at room temperature, with Parmesan shavings.
