Baked Greek Pasta

 

Serves 4


Ingredients:

1 Goody Sedani Pasta pack (Shape 12)

1 tbs oil

1 onion, chopped

2 garlic cloves, crushed

3 red peppers, halved and sliced after removing seeds

3 zucchini, sliced

2 cups Goody peeled & chopped tomatoes can

3 tbs dried tomato paste

2 tbs fresh basil, chopped

225 g fresh fusilli

1 cup Swiss cheese, grated

Shredded basil for garnish


Steps:

1-Heat the oil in a large pan and add the onion and garlic. Stir continuously until tender. Add red pepper and zucchini and cook for 5 minutes.

 
2-Stir in the canned tomatoes, tomato paste, and basil. Then add salt and pepper to taste. Cover the pan leave to cook for 5 more minutes.
 

3-Meanwhile, let a large pan of salted water come to a boil and add pasta.


Reduce the heat, cover the lid, and continue cooking.


Uncover the lid for 3 minutes until the pasta is almost cooked. Drain the pasta completely then add the prepared vegetables and toss until thoroughly mixed. 


Tip: If Swiss cheese is unavailable, you may replace it with mozzarella cheese.
